What’s Up Wednesday?
Hey friends! I have taken a little blogging break while tending to the Beucler crew. The non-Covid stomach bug hit us last week, so I stayed snuggled up and out of pocket for several days. But, this week, back to normal! I hope that all of you are staying healthy and safe. And, can you believe that it is almost November?!? Insane!

WHAT WE’RE EATING THIS WEEK?
This week has been SUPER yummy around here! Monday night, I made a healthy version of Bang Bang Shrimp. Y’all . . . it did not disappoint!
If you are interested, here is the recipe . . .
BANG BANG SHRIMP
Ingredients:
*10 ounces of raw shrimp, tails removed, peeled and deveined
*1.5 ounces of avocado
*1.5 cups chopped cabbage
*2 T Lite Wishbone Thousand Island
*1 t sriracha
*1/4 t Trader Joe’s Everything but the bagel seasoning
Directions:
Cook shrimp in the air fryer for about 6 minutes at 400 degrees, shaking the basket halfway through. Weigh out 7 ounces of cooked shrimp. Add sliced avocado and chopped cabbage to a serving bowl; set aside. Add Thousand Island dressing, hot sauce and cooked shrimp in a small bowl tossing to coat. Then add shrimp to the avocado and cabbage bowl. Sprinkle Everything But the Bagel Seasoning on top. Enjoy!
*Makes 1 serving! YUUUUUUUM!!!
We also have burgers, baked cod, and no-parm chicken on the menu for this week! YUMMY! Yes please! Also . . . a quick note about the no-parm chicken. It is a recipe out of The Defined Dish cookbook, which you know that I love! My kids ask for this regularly, so it is on heavy rotation in my house!
WHAT I’M REMINISCING ABOUT
Hmmmm . . . maybe sleeping late? HA! I slept until 8:30am two Sundays ago, and I have been thinking about that glorious moment ever since. Other than that, we are good.
WHAT I’M LOVING
This weather! It is currently rainy, gloomy, and freezing, BUT . . . it is so cozy! The fireplace is on, I have my flannel pajama pants on repeat rotation, and the hot tea is currently sitting next to me. I am all about Fall! Love, love, love!
WHAT WE’VE BEEN UP TO
Football games and golf tournaments have been all over our October calendar, and I love it! Love watching my boys follow their hearts, and work hard at the sport they enjoy the most!
ALSO . . . this is hilarious that I am even writing this, but I am now a Certified Health Coach! What, what? I have always joked with a friend that I was going to be a life coach and just walk around giving people advice (HA!), but I never thought I would actually be a Health Coach! Clearly, we never know how life is going to go, and how God is going to steer us one way or the other. But, took my certification test yesterday, and it is official! I have asked Reid to refer to me as Dr. Beucler, but he is currently refusing. Will work on that a little more. If you want to try Optavia . . . I am here, and can now coach you up in a way that will help you both physically and emotionally! YEAH!
WHAT I’M DREADING
Thankfully, nothing at the moment.
WHAT I’M WORKING ON
Friday is October Book Review Day! WOOHOO! September was a bit rough in the reading department, and I didn’t just LOVE any of the books I read. WELL . . . October is the opposite, friends. I can’t wait to share my review with you on Friday, so make sure to come back for that!!

WHAT I’M EXCITED ABOUT
Not only is Friday October Book Review Day, but it is also my 16th wedding anniversary! SIXTEEN years, y’all! As of December we will have known each other 20 years, and as Reid told his brother that is about to get married, “We have had about 18 great years”. I laughed out loud when he said that! Here is the deal . . . if I want to be married for 50+ years, we will have our ups and our downs. That is marriage. And, for those that haven’t gone through it, infertility is not for the weary! Eighteen overall great years out of twenty sounds pretty good to me. Love this sweet man, and excited to celebrate with him over the weekend!
WHAT I’M WATCHING/READING
I am SO boring right now. ESPN, a Dude Perfect episode, or The Masked Singer. That is the background of my life right now. While Reid and Jackson were at a golf tournament this past weekend, I did let Harlan watch Talladega Nights. #motheroftheyear It was SOOOOO funny, we laughed so hard and just enjoyed our little Saturday afternoon date with Rickie Bobbie! “If you’re not first, you’re last.”
Reid and I did FINALLY start the 2nd season of Yellowstone last night, so hoping to get back into that quickly!
WHAT I’M LISTENING TO
But, as usual, still obsessed with the Smartless Podcast. It’s amazing. They released a new episode with Reese Witherspoon on Monday, so I’ve been a happy girl listening to that on my drives around town!
WHAT I’M WEARING
Rain boots and a sweatshirt! We have officially entered into Fall here in Dallas, and it has been ushered in with a never ending rain storm. Also, I am currently wearing fuzzy socks because I love them, and everyone should own a pair!
WHAT I’M DOING THIS WEEKEND
Per usual . . . football and golf! BUT, pumped about taking some time to celebrate our big wedding anniversary. AND, it’s Halloween! What is everyone doing for Halloween? Kind of a strange limbo we are in here this year! Still finalizing costumes, and working on a plan to make it even a sillier holiday than usual. WHAT I’M LOOKING FORWARD TO NEXT MONTH
My little man is turning 13 next week! HOW IN THE WORLD? Time flies friends, and I am holding on to this miracle boy of mine with everything I have.
Love him so much. Oh, my heart!
Besides that? Thanksgiving! Yeah. Have I mentioned that I love Fall?
WHAT ELSE IS NEW
I have some fun things in the works for Lunchbox Babies, LB Boxes, AND Optavia. Going to be a busy end to 2020, but looking forward to all that is to come!
